Lemon Syrup Cake

How delicious does this look? Very is the answer. It is a simple little cake that has just the right amount of sweet and sour and it is a breeze to make, prep is literally about 7 minutes!

This is not my recipe, this is a Baby Mac recipe, you can find the recipe and Beth's lovely blog by clicking here. It is very sweet and makes me want little girls of my own, plus more cake. The only change I made to the recipe is cooking it at 160c for 50 minutes as I didn't want mine to sink. I also poked lots of holes in the top once it was ready and then poured over the syrup.

This recipe is for a pretty small cake, maybe 6 slices? You may be able to stretch it to 8 if you serve it with double cream but I'd prefer to keep it at 6, not one likes a host that is stingy with the cake.

As I spent the afternoon stuck in traffic and then fed the pets and fussed about with my cake I really didn't think about dinner. I stared at the fridge for a bit searching for devine inspiration before deciding on salt and pepper calimari, served with zucchini and green beans.

The calamari is dead easy as I buy the rings already cleaned, I toss them lightly in flour, salt and pepper then shallow fry a few at a time. The veggies looked a bit bland so I cooked them in my Tupperware jug for 6 minutes then fried them off in the leftover oil, crumbs and a good dollop of crushed garlic. Very nom.
