Banana Caramel Poke Cake

After a few days away we had some sad looking bananas in our fruit bowl. I couldn't waste a ripe banana so made two cakes, one for us and one for our beautiful neighbours as they looked after our pets whilst we were away.

This cake is beyond easy and I believe an original AWW recipe so you know it is good!

Banana Cake

Ingredients

150g Softened Butter

165g Firmly Packed Brown Sugar

2 Eggs

1 1/2 cups Mashed Banana (RIPE)

1 tsp Bi-Carb Soda

2 tblsp Warm Milk

1 cup Plain Flour

2/3 cup SR Flour

Method

Pre-heat your oven to 160c fan forced. Grease and line a 20cm round cake tin, I like the springform and this cake will rise quite a bit so high sides are best.

Beat your butter and sugar in a stand mixer until light and fluffy then add your eggs one at a time. Whilst this is combining mash your bananas, sift your flours together. Mix the milk and soda in a small jug and put aside.

Add your bananas and beat slowly. Next add your sifted flour in two lots, once combined add the milk and soda. Mix until combined.

Pour into the prepared tin and bake for 55 minutes, I put my cake on the middle rack. Once cooked rest in the tin for 5 minutes before turning out onto a cooling rack.

Caramel Sauce

Ingredients

50g Butter

1/2 cup Firmly Packed Brown Sugar

2 tblsp Golden Syrup

Method

Add all ingredients to a small saucepan. Stir over a low heat until the sugar has dissolved. Take off the heat. Move your cake onto a serving plate, poke liberally then pour over your caramel. Best served warm with cream or icecream.
