School Lunches

The worst part of every evening is trying to think of what we will have for lunch the next day. I prefer to cook extra so we can take leftovers however sometimes I still need to get a bit creative.

This a bit of a lie, I don't get creative as Husband is very happy to have the same lunch every day. But I need to get creative for me as if I don't feel like a sandwich at 9pm the previous night I just won't make myself lunch and then I'll be left eating an apple and that is what led me to my vitamin deficiencies in the first place.

Husband is easy, 2 snacks, 2 pieces of fruit and 2 ham, cheese, tomato sandwiches on white bread ready for the sandwich press. I still gripe about putting it together which is silly as I have a life time of lunches ahead of me.

My Mum still packs lunches every day as working on the farm means you can't just pop home for lunch. Her lunches are spectacular though, beautiful sandwiches, thermos for tea and coffee, homemade cakes and biscuits. Yum. Mum has always put a lot of effort into our lunches, we never opened a lunchbox at school and felt disappointed that's for sure!

Since I managed to buy none of the recommended foods on my list from the Doctor I have tried to create a lunch that ticks the boxes, sort of, maybe. I give you the Messy Platter! Ok, my Doctor has a strong accent so I think she meant Mezze Platter but from this day forward it will be a Messy Platter.

Looks like it should be served with wine at a picnic doesn't it?

Olives, tomatoes, ham and cheese. Yay! Protein, Calcium and other things! All served in the beautiful Tupperware Clear Mate. Please comment if you have no idea what a Clear Mate is, I will gladly enlighten you and change your life.

How sad does the sandwich look behind it? Let's not dwell on that, I will be packing white bread sandwiches until I'm dead. Whatever works I say!

What do you do for lunch? Don't tell me you buy it every day, oh I remember those carefree days! Right before we did the math and realised that at $10/day for two people we were spending a cool $1040 each year on lunches.

Gosh all this talk of food is making me hungry, maybe I should just have a little nibble before lunch...
