Winner Winner Chicken Dinner

As part of my quest to eat more protein I am actively adding it to every meal. Including dinner! We eat quite a bit of chicken, it is affordable, lean and quick. This recipe is a little something I threw together this week that tasted really yum.

Ingredients

400gm chicken breast

250gm cherry tomatoes

1 small zucchini

1 onion

3 cloves garlic

1 tsp all-purpose seasoning

2 cups vegetable stock

1/2 cup white wine

Method

Slice your chicken breast into strips, get out a big heavy pan, pop it on medium to high heat and add your chicken, sprinkle with all-purpose seasoning. Cook until it starts to brown. Meanwhile, chop up your cherry tomatoes, zucchini, onion and garlic. Whack that in the pan too.

Mix it all around then add your wine and stock. Using your spatula scrape off all the chicken bits from the bottom of the pan, these taste amazing. Turn it down to a medium to low heat and leave it to bubble away for a good 15 minutes, it is good to go when your tomatoes are soft and the chicken is cooked through.

I served it with fresh corn from the cob but it is also really yummy with rice. I cook my corn cobs in the microwave, just leave them in their husks and microwave on high for 6 minutes. Put aside to cool before peeling the husks back as the steam gets trapped and you don't want to burn yourself.
