Banana Bread! Na! Na! Nana!

I got my bake on yesterday and whipped up a quick banana bread, we are trying not to eat as much delicious cake so kept away from my Banana Caramel Poke Cake. You cannot be tempted to eat this all the time though, it is not healthy, it is really just a cake pretending to be a loaf of bread. Sneaky cake!

This recipe is modified from Australian Women's Weekly Retro Cookbook, a favourite of mine.

Ingredients

90gm Butter, room temp

1tsp Vanilla extract

110gm Brown Sugar

110gm Caster Sugar

2 Eggs free-range

1cup Mashed ripe banana (about 2 medium bananas)

150gm Plain flour

150gm Self raising flour

1tsp Allspice

Method

Turn your oven onto 180c, 160c if fan forced. Move your oven rack to the middle. Grease and line a loaf tin, extend the paper up the sides as this cake will rise.

Using a stand mixer beat your butter, sugar and vanilla until light and fluffy, on a medium speed. Add your eggs one at a time, beat until combined. In a separate bowl sift your flours together.

Add your mashed banana to the butter mix and combine, slowly add your flour, combine gently on a low speed. Add your allspice and combine. You may need to scrape down the sides.

Once all combined pour the mix into your lined tin. Make a little cover with a pleated piece of baking paper and bake for 40 minutes in the centre of the oven. Remove the paper cover and bake for another 30 minutes. It is ready once golden brown and a skewer comes out clean.

Leave to cool in the tin for 5 minutes before turning onto a wire rack. Serve warm with cinnamon butter, yum!
