Happy Easter!

Easter is a wonderful time of year, for many it is a special religious time, others love the time with their children - bonus days off work, for us it is about family. Last year we were able to go to the family farm but this year it is just us and the furkids. Not heading the farm means I'm a bit homesick and we don't get an Easter lamb for the freezer! We did head out to Super Butcher where George sorted us out with half a lamb from the Victorian Gippsland. Get in my belly!

Minnie is taking her extra long weekend very seriously.

We have spent the last two days relaxing at home and working on the garden. I am still loving myself sick over not working on Saturday's and today we went to the Rocklea Markets. I ate too many little Dutch pancakes and bought some great fresh fruit. Exciting times

Not having kids we don't really fuss with the Easter Bunny, we don't buy each other gifts or decorate the house. I do however love chocolate. One of my favourite Birthday party treats as a child were Chocolate Spiders, these Bird Nests are pretty much the same thing but with more chocolate - delicious and even the kids can help make them.

Ingredients

500gm Chocolate

100gm Slivered Almonds

100gm Changs Fried Noodles

Easter Eggs

Method

Line two trays with baking sheets or baking paper. Put aside. Now is a great time to make space in the fridge for two baking trays.

Bring a small pan of water to the boil, reduce it to a gentle simmer and place a larger bowl on top. Break up the chocolate and place it into the bowl. Stir until melted. If you have little kids helping you can melt the chocolate in the microwave.

Take the bowl off the heat and stir through the noodles and almonds. Combine until all ingredients are coated in chocolate.

Scoop some mix onto the prepared baking sheets, add two little eggs to the centre of the "nest" and then put in the fridge until set.

ENJOY! These won't last too long, they are super cute and are very addictive. If you have a nut allergy you can swap out the almonds for bran but don't let Husband know, he really hates it when I put cereal into his food!
