Seafood Risotto

I'm not normally nervous when cooking dinner but tonight I was a little apprehensive. You see Husband likes what he likes and not much else. I was taking a risk tonight but sometimes you just need something more exciting than a casserole or meat and three veg!
Seafood risotto is a favourite of mine but who could be bothered standing over the stove stirring for hours? I am far too busy watching The Great British Bake Off Master Class, not so many soggy bottoms but lots of tips and tricks from Mary and Paul.
I'm loving my new Tupperware Pressure Cooker and just received the little cookbook, last week I made everything from lamb casserole to chicken curry.
My new microwave is a dream, it is far more efficient and larger. It is important to note you need to adjust your microwave to 900 watt, this is High-Med on my new baby!
This dinner is done in about 25 minutes, including prep through to plating. I am a bit loose with ingredients and quantities but the Tupperware Pressure Cooker is very forgiving.

Ingredients
1 1/2 cup Arborio rice, rinsed
1 tsp minced garlic
500gm marinara mix
1 tsp salt
875ml chicken stock
1/4 tsp chilli flakes - I skipped this as Husband hates chilli
30gm butter
1 tsp chopped parsley - also skipped as it was in my marinara mix
55gm grated parmasan
Rind of 1 lemon
Salt & pepper to serve
Method Grab your pressure cooker, look at it lovingly then add your rice, garlic, marinara mix, salt and stock. Give it a good stir then lock on the lid. Microwave at 900 watts for 23 minutes. Pour yourself a wine, cooking is exhausting!
Once your pressure cooker indicator drops you can add your butten, parsley, parmesan and lemon rind.
Serve with a wedge of lemon and lashings of cracked pepper. Nervously give it to your husband and hope he doesn't just push it around for a bit before filling up on ice cream.
Here is a photo from the recipe book because mine wasn't very photogenic and I'm not great at fancying up bits of prawns and rice.

Notes
I used the marinara mix from my local Woolies, they only had 450gm left but it all still worked out.
I ran short on the parmesan so I topped it with grated tasty cheese, it was still really yum.
It probably could serve at least 6 adults. It is a heavy dish and is very filling!
Husband did like it, found it all a bit strange but would have it again and will eat the leftovers, just doesn't want it too often - Mary would be proud!
